We don't celebrate Thanksgiving in New Zealand, Ray, but I'm thankful for all these quotes! The C. S. Lewis one at the end is particularly helpful. I notice, too, a number of the people you've quoted are poets. I think reading and writing poetry is often (not always) a good facilitator of gratitude.
